Walking through Beijing, I’m never sure whether things are to be thrown away, or if they’re the meal being prepared.

    These are throwaways – hair tail is a traditional festival treat for Northern Chinese. The body is chopped into inch-long sections & deep fried. The head & the really thready end of tail are thrown away.
